Vine-Ripe Cherry Tomato, Watermelon, Feta & Mint Skewers with Balsamic Glaze
These skewers are light, tasty and the perfect no-cook Summer recipe
VINE-RIPE CHERRY TOMATO, WATERMELON, FETA & MINT SKEWERS WITH BALSAMIC GLAZE Makes 8
- 16 watermelon cubes (about 1/4 of a 3-lb. watermelon)
- 16 fresh mint leaves
- 8 oz. feta cheese, cubed
- 16 yellow cherry tomatoes (or red or a mix of both)
- Balsamic glaze (store-bought or homemade)
- 1 T. olive oil
- 1 t. kosher salt
- 1/2 t. freshly ground black pepper
- 16 3-inch wooden skewers
Starting with the watermelon squares, push the watermelon onto the skewer, leaving a little space to hold on. Then skewer a mint leaf, feta cube and the tomato; continue with the remaining skewers.
Drizzle the skewers with the balsamic glaze and the olive oil. Sprinkle with salt and pepper and serve.
