Apple and Goat Cheese Quiche

Executive Chef Pascal Vignau of Chandler’s Restaurant & Lounge in Carlsbad brings a highly accessible French flair to some of the kitchen’s best-selling dishes, including this flavorful quiche.

Apple and Goat Cheese Quiche

2 T. butter
2 medium Granny Smith apples, cored, peeled and diced
9-inch pie shell
1/2 c. crumbled goat cheese
4 whole eggs
16 oz. cream
Salt and pepper to taste
1/2 c. Gruyère cheese

 In a heavy skillet on low heat, melt butter. Add apples and sauté at high heat to caramelize. Remove the pan from the stove and spoon the apples onto paper towels.

When the apples are cool, place them in the pie shell with the goat cheese.

Mix eggs and cream with salt and pepper and pour over the apples. Stir carefully to incorporate all ingredients. Sprinkle Gruyère on top.

Place the pie shell on a baking sheet and bake at 300 degrees for 40 minutes. Remove and cool before cutting.
