Created by Juniper and Ivy mixologist Zane Thurston, the Midnight Marauder has a luscious berry flavor up front with a touch of golden honey on the finish. Those looking for something not as sweet can skip the lemon meringue foam and still have a perfectly balanced cocktail.
3 oz. gin
1/2 oz. crème de cassis
1 oz. Saint-Germain elderflower liqueur
1 oz. honey
Lemon meringue foam (emulsify 1 T. egg white, 1 oz. sugar and 1/2 t. lemon extract in a blender)
Spring flower petals to garnish (optional)
Muddle blackberries in a cocktail shaker. Add gin, liqueurs, honey and ice. Shake and strain the liquid into two martini glasses. Top with lemon meringue foam and garnish with a few flower petals.
