Brussels Sprouts With Honey Sauce

Brussels Sprouts With Honey Sauce
Serves 4
Oil for frying and sautéing
5 1/2 c. Brussels sprouts
3/4 c. capers
1/2 T. garlic
1/2 T. shallots
1 1/2 c. walnuts
3/4 c. crispy bacon, broken into pieces
3 /4 c. honey
3/ 4 c. champagne vinegar
Heat 1/2 inch of oil in a shallow pan. Add Brussels sprouts and fry until they are light golden brown. Remove from oil and place on a paper towel to cool. When cool, cut in half.
Add capers to oil and fry until they start wilting. Remove from oil and place on a paper towel to cool.
Sauté garlic and shallots in 1 T. of oil until translucent. Add Brussels sprouts, capers, walnuts and bacon, tossing ingredients constantly for about 1 minute to prevent burning.
Mix honey and champagne vinegar until the honey has dissolved.
Add honey sauce to the sauté pan and toss Brussels sprouts until evenly coated. Keep cooking until the honey mixture becomes caramel in color and has thickened to a maple syrup consistency.
