Spicy Chili-Lime Shrimp

Just like the Concours d’Elegance event, this dish is elegant with international appeal. It’s stylish and designed to please discerning palates with its global flavor tones and zingy lime juice/tarragon finish. At Amaya La Jolla, we marinate shrimp in an exotic blend of saffron-infused olive oil and sambal, a chili paste used especially in Indonesian and Malaysian dishes. The shrimp are cooked just until they’re pink and slightly firm.


Spicy Chili-Lime Shrimp
Serves: 6

1/2 T. minced shallots
1/2 T. minced garlic clove
1/2 c. granulated sugar
1/4 c. sambal (fresh chili paste)*
4 oz. saffron-infused olive oil*
24 large shrimp
Juice from 1 lime
2 t. chopped fresh tarragon
1 T. butter
Toasted bread/baguette, sliced

Place shallots, garlic, sugar, sambal and oil in a blender. Blend until the sugar dissolves and all the ingredients are thoroughly incorporated. Reserve half of the liquid. Marinate the shrimp in the other half of the liquid for two hours (or overnight) in the refrigerator.

Over high heat, sauté the shrimp in a large sauté pan for about 2 minutes, turning over at least once. Add the reserved marinade and simmer the shrimp for 1 more minute. Remove from heat and add lime juice, tarragon and butter. Lightly stir to coat the shrimp. Serve with toasted bread or baguette.

* Sambal may be found in the Asian foods section of specialty food stores and larger supermarkets. Saffron-infused olive oil may be purchased at some specialty food stores and online at specialty food sites or may be homemade.
